Quick and easy dinner much inspired by our last trip to Italy and the contents of my pantry. We had leftover chicken breasts and the rest of the ingredients were loitering in my freezer. Slow carb dinkel wheat or spelt is a great replacement for rice or pasta.
Dinkel wheat or spelt
Cooked chicken breast
Spinach (I used frozen but fresh is cool too) warmed up
Genovese Pesto
Parmesan cheese, grated
1/2 lemon, squeezed
Pepper
Boil the dinkel wheat, I had bagged portions and half way through the cooking time I tossed in the chicken breasts to heat them up. When cooking time, in my case 15 minutes was up, remove the dinkel bag and chicken breasts. Achtung! Reserve the dinkel water for juicing up the mix.
In a large bowl, dump the dinkel and chicken breasts into the bowl, add the warmed up spinach and toss with 3 or so tablespoons of pesto. Add a splash or two of the cooking water to the mix to moisten it up and give it a glossy finish. Add the freshly squeezed lemon juice, parmesan and pepper and toss until well mixed. Add more of the cooking water if it looks dry.
Serve and be joyful for a quick and healthy dinner!
