Spring Fever Chicken Soup – week 12

Jazzy lemon chicken and orzo soup for a spring fever is the best medicine, even for your pollen allergies. This soup will help clear your sinuses and give you a deep sense of happiness.

Healing Chicken Broth

1 soup hen
4 stalks of lemon grass bashed up or split open
8 cloves of garlic smashed
3 red chili peppers whole
1 peeled and roughly chopped knob of ginger
2 stalks of celery
2 carrots
3 to 4 liters of water
sea salt and fresh pepper

Add the ingredients to a large pot. Bring to a boil and skim off the gunk.

Reduce heat to a simmer and let bubble until the chicken easily tears from the bone around 1 to 1 1/2 hours.

Separate the solids from the liquids and rinse your pan. Find all the good chicken parts and chop into generous bite size pieces. Remove fat and strain the liquid so you get a nice clear broth.

Spring Fever Chicken Soup

Olive oil
2 stalks of celery, finely diced
2 carrots, finely diced
1 onion, finely chopped
Chicken, chunked from the previous assignment
Orzo
Oregano
Kale
Healing chicken broth
Zest and juice of one organic lemon

Drizzle oil in your pan and heat until warm. Toss in the celery, carrots and onions and heat until the onions are transluscent. Add the chicken, orzo, oregano, kale and broth.

Cover and bring to a boil. Reduce heat and simmer 30 – 40 minutes to let your flavors meld.
Before serving add the lemon zest and juice.
